Last week, a friend of ours gave us a HUGE bag of apples from one of the local orchards. Despite my husband and I both eating multiple apples a day, the pile of apples didn't seem to be diminishing. So, I got it in my head to make some apple pies.
And then I fell down the rabbit hole that is Pinterest. By the time I got around to baking on Friday, I was not just baking A pie. I was now determined to bake 2 different kinds of apple pie (traditional and salted caramel) and they were going to "personal" sized (approximately 4" in diameter). I also fool-heartedly believed that it would take me 2 hours tops.
Oh, and did I mentioned I was making the crust from scratch too.
I turned on my Prince Pandora station and got to work.
FIVE HOURS LATER I had managed to get my husband involved, trashed my kitchen, and had 20 small pies. I ended up having to make 6 batches of pie crust. I still have a large tuperware container full of diced apples which I will most likely throw into the crock pot and make apple sauce.
And I still have 7 whole apples left.
